Response Question: Johnny cake (pages 61-113)
Johnny Cake is mentioned as a staple of Tim's diet. Find a recipe for Johnny cake and post it on our blog. Does this sound like something you would like to eat? Would you like to eat it on a regular basis? Why do you think Johnny cake was a staple of Tim's diet?

OLD FASHIONED JOHNNY CAKES
1 egg
2 c. white or yellow cornmeal
1 tsp. salt
1 1/4 to 1 1/2 c. milk
Beat 1 egg. Stir in 2 cups white or yellow corn meal, 1 teaspoon salt, 1 1/4 to 1 1/2 cups milk (to make batter thick). Drop spoonfuls of batter onto a well-greased hot griddle and fry to a golden brown on each side. Stir batter occasionally to keep well mixed. Serve hot with butter.
I would not be intrested in eating a Johnny Cake.I Absolutely would not eat this on a regular basis. Johnny cake was a staple if tim's diet because he did alot of work around the tavern so he had to stay healthy.
Johnny Cake
Another family favorite: You get a cereal bowl, you take a square of cake. You slice the cake square in half crosswise and lay the halves in the bowl, cut side up. You spread butter over both halves and then top it all off with corn syrup. You eat it. You enjoy!
Ingredients:
7/8 cup flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup yellow cornmeal
1/3 cup brown sugar
1 egg, well beaten
7/8 cup milk
5 tablespoons melted butter or shortening
Directions:
Grease an 8 inch square cake pan. Preheat oven to 400 degrees F.
Mix the flour, baking powder, salt, cornmeal and brown sugar together.
Combine the egg, milk and butter. Make a well in the dry ingredients, pour the milk mixture over and stir quickly only enough to blend. Turn into prepared pan.
Bake for 20 to 25 minutes. Serve warm.
I wouldn't eat johnny cake because it sounds nasty. I wouldn't eat it on a regular basis either. Johnny cakes were a staple of his diet because he ate healthy because he worked all around the tavern. Johnny cakes sound fattening and he couldn't eat something like that.
Jonny Cake
1 egg
1/3 c. sugar
1/4 c. butter flavor Crisco, melted, divided
1 c. sour milk
1 tsp. baking soda
1 c. all-purpose flour
3/4 c. cornmeal
1 tsp. salt
maple syrup, jam or honey
Combine egg, sugar and 1 tablespoon plus 1 teaspoon butter flavor Crisco in medium bowl. Stir in sour milk and baking soda. Add flour, cornmeal and salt. Stir just until dry ingredients are moistened. Cover. Let stand in cool place for 30 minutes.
Pour remaining shortening on griddle or in large skillet. Heat on medium heat. Spoon tablespoonfuls of batter onto griddle. Brown on one side. Turn. Brown on other side. Serve with syrup, jam or honey. 18 Johnny Cakes are made.
This is not something that I would want to eat. I would also not eat this on a daily basis. Johnny cake's was a staple of Tim's diet because he had to stay healthy because he was doing a lot of work around the tavern.

METHOD / DIRECTIONS:

I would never ever eat Johnny Cake in my entire life even if you pay me to eat it, I still wouldn't eat it. If I would definitely not eat it on a regular basis. Tim needs to stay healthy from doing all that job.

It does not sound that bad so I would just give the Johnny Cakes a taste. If it does taste good I would not mind to eat it. I like to experience new foods so this would not bother me. I think this was a staple of Tim's diet because the ingredients of the cake are all easy to get so making the cake is not a hassle.

This sounds likes something i would not like to eat. I wouold not like to eat johnny cakes on a regular basis. It was a staple of tims diet because all the work he was doing he had to be healthy and a johnny cake had a lot of protine and other good stuff for you.
Pumpkin Johnny Cake
Ingredients:
575 grams. flour
1½ tbs. sugar
1 tsp. salt
1½ tbs. baking powder
¼ tsp. ground cinnamon
1 tbs. margarine or shortening
1 cup mashed pumpkin
½ cup milk
½ cup water
Preparation:
Put the flour, sugar, salt, baking powder, cinnamon and shortening in a bowl. Mix well with a wooden spoon and then form a hole in the middle. Add the mashed pumpkin in the middle of the mixture.
Mix milk and water. Pour this mixture on the pumpkin and keep on stirring the spoon in the middle mixing the flour little by little until it becomes a dough.
Sprinkle a little flour on the table and turn the dough on it. Finish the dough by adding a little more flour and knead well. Divide the dough into 10 pieces and form balls.
Add a little more flour on the table, put the balls of dough on it, cover them with a moist dish towel and let them rest for 10 minutes.
After that flatten them with a floured rolling pin and let them rest for another 15 minutes. Then fry them slowly on a moderate heat. Put them on kitchen towel to absorb the cooking oil. The cakes can be stuffed with sliced cheese or stewed codfish.
I wouldn't really eat these on a daily basis. Honestly, it looks like too much work, and they don't really sound appealing. Tim just had to eat them as a part of his diet because he did a lot of tough work, and he needed to keep his body healthy.
Kudos to Mike B. for being open to trying new foods! Johnny cake is pretty easy to make, and, as Mike B. points out, the ingredients are easy to find (especially in Connecticut in the late 1700s). BTW- if you have ever eaten corn bread or a corn muffin, you pretty much have eaten Johnny cake :)
JOHNNY CAKE RECIPE
INGREDIENTS:
- 3/4 cup yellow cornmeal
- 1/4 brown sugar
- 1/3 cup milk
- 2 tablespoons vanilla
- 2 teaspoons butter
- 1 large egg
- 1 cup flour
DIRECTIONS:
1. Grease the pan that you choose
to put your "Johnny Cakes" in.
This will allow it not to stick.
You may use flour and butter.
2. Beat your eggs and combine it
with your milk, vanilla, and
butter.
3. Next,combine your yellow or
white cormeal, your chose. Mix
it along with the brown sugar
the other ingredients you've
just mixed.
4. This would be alot easier if you
chose to use a blender.
5. Pour mix into your pans and set
oven to about 350 degrees F.
6. Let it cook for about 20-25
minutes also.
Well, you can't say no until you try it. So I'd try the food first. However, I really doubt that I would eat this on a daily basis.
Tim probably eats "Johnny Cakes" because he's a well grown boy and needs his nutrition. Cornmeal, sounds like the way to go!

13 beaten egg whites
6 tablespoons honey
3 cups skim milk
Combine the dry ingredients and mix well.Set aside.Combine the wet ingredients and mix well.Pour the wet ingredients into the dry mixture. Mix only until the dry ingredients are moistened. Do not overmix.Spray muffin tins with vegetable cooking spray.This can make up to 36 pieces of cornbread.
This is something I would eat.It sounds okay and I would want to try it.I would not eat this on the regular basis because I dont think it would be all that good.

I think that I would try a Johnny cake cause it really don't sound to bad and I like to try new food so yea I would eat it with no problem.The way that Johnny cake was a staple to Tim's diet cause of all the work he did he had to stay healthy.
